Observation (CORRECTED DURING INSPECTION): Several cloth buckets and sanitizing cups contained less than 200ppm quat sanitizer. One sanitizing cup at the far end drinks mixer contained zero measurable quats.
Corrective Action(s): Replaced during inspection. Ensure sanitizer is replenished at least every 2 hours (following the sanitation plan for the restaurant), or more often if strength cannot be maintained at 200ppm.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Two front area hand wash stations were not equipped with hand soap (central and end of counter furthest from front door). Staff are using the central sink for coffee, so the far end hand sink must be available for use at all times. Additionally, the back kitchen hand sink paper towel dispenser had run out, and staff have been using paper towels stored on a shelf with food.
Corrective Action(s): Temporary hand soap placed at sinks. Ensure the soap dispensers are refilled, or a pump bottle is made available for use by the end of today. Monitor soap and paper towels, and refill as necessary. Do not leave paper towels outside of dispensers.

*General sanitation satisfactory. No pest issues observed during inspection.
*Note: some cleaning is required for shelving in walk-in cooler/freezer. Clean shelving by next week (24th November 2016).
*All cooler and freezer temperatures satisfactory. Ensure digital temperature records are kept up to date - these will be checked at the next inspection.
*Dish sinks in working order. Staff appear to be following full 5-step warewashing methods.
*High-temperature dishwasher reached a final sanitizing rinse temperature of > 71 C at the plate level.
*Hot holding temperatures measured at > 60 C. Soup/chilli reheating procedures satisfactory.
*Milk/cream dispenser temperatures OK. Nozzles maintained in clean condition.
*Knives and other implements generally stored in clean condition.
*Two washrooms checked; both maintained in clean condition.
*Dry storage maintained in tidy condition.
