Observation (CORRECTED DURING INSPECTION): Items on the top level of the right hand line cooler had an internal temperature of 11 C.
Corrective Action(s): Placed on ice. Keep all items on ice or discard them within 4 hours. in this cooler until it is repaired.

Observation (CORRECTED DURING INSPECTION): Glasses run through the glasswasher were not being properly sanitized.
Corrective Action(s): They will be run through the dishwasher until the glasswasher is repaired.

Observation: a) The bar glasswasher did not have 12.5 to 25 ppm Iodine. It was close to 0 ppm.
b) The cooler at the end of the line had an ambient temperature of 12 C and the food in the cooler had an internal temperature of 11 C .
c) The middle pasta hot holding unit had an ambient temperature of 25 C.
Corrective Action(s): a) Repair by Friday. Use the dishwasher in the kitchen in the meantime.
b) Fix within one week and keep all food on ice.
c) Fix within one week so that it can maintain a temperature of 60 C or warmer.

Observation: Light covers need on two of the lights in the kitchen above the cooking line.

Comments

All coolers, except for the one mentioned above were < 4 C.
All freezers were < -18 C.
No evidence of pests. Pest control report on site.
Hot held items were > 60 C, with the exception of the middle pasta warming unit.
The dishwasher had 100 ppm chlorine at the plate level.
General sanitation was satisfactory
