Corrective Action(s): Clean and sanitize the slicer. Follow your sanitation plan for proper manual warewashing. Pay attention especially to hard to reach areas.

Observation (CORRECTED DURING INSPECTION): A bag of sliced chicken breast was thawing on the shelving unit under room temperature. Temperature measured at 3C.
Corrective Action(s): Move the chicken breast into the walk-in cooler immediately. Food must be thawed properly inside a functional cooler or under cold running water. Do not thawing food at room temperature.

- Sandwich cooler and walk-in cooler measured at 4C or less.
- Walk-in freezer at -19C.
- Meatball and soups hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium sanitizer available in pails and from the dispenser. Test strips available on site.
- 3 compartment sink available for manual dishwashing.
- Food products stored off the ground.
- Temperature records and cleaning logs maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed at the time.

- Covid19 Safety Plan available on site.
- Dining area open, tables separated by 2 meters.
- Maximum occupancy limit posted at front entrance.
