Observation (CORRECTED DURING INSPECTION): Grill tongs stored in buckets of very dirty sanitizer noted at 100 ppm QUATS (floating food debris and oils).
Corrective Action(s): Ensure all utensils are stored and maintained in sanitary condition. Replenish sanitizer solution every 2 hours or when solution becomes visibly dirty/ cloudy. Sanitizer must be 200 ppm QUATS. Tongs were washed and containers replenished with fresh solution.

Observation (CORRECTED DURING INSPECTION): Sanitizer buckets with wiping clothes noted at 100 ppm QUATS and solution is visibly dirty/ oily.
Corrective Action(s): Ensure all sanitizer buckets are replenished every 2 hours or when solution becomes visibly dirty. 200 ppm QUATS must be available with clean wiping clothes to sanitize food contact surfaces.
Solution replenished.

Observation: 1.Dish pit flooring has serious water damage, discoloration and is lifting up.
Corrective Action(s): 2.Ensure flooring is maintained as per approved plans. Flooring must be smooth, durable, non- absorbent, and easily cleanable. On going issue. Operator says the owner is waiting to redo entire flooring (front of house and back kitchen area). Unknown time frame. The owner must contact the EHO with a time frame within 1 week. Business card provided.
2. Masking tape is not an acceptable material to seal gaps between equipment. Tape can not be easily cleaned. Remove tape and glue and replace with permanent durable strip of material that is smooth, durable and non-absorbent.
