Pizza display on timer system (60 minute rotations), however operator forgot to turn on countdown --> you must turn on time for proper tracking.
Quat ~ 200 ppm detectable in sanitizer pail and at dispenser.
Prep fridge insert level: gravy (4 C), beef (2 C), cheese (4 C); undercompartment 3 C.
Walk in fridge 4 C.
Undercounter freezer - 15 C.
Standup freezer (2 door) - 11 C. Standup freezer (1 door) - 20 C.
High temperature dishwasher 79 C plate level, 198 F gauge level.
No signs of pest activity noted; premises has monthly pest control.
Foodsafe certified staff (owner on-site).
