Observation (CORRECTED DURING INSPECTION): Manual circular slicer found to have grease build up in the center axle. The rest of the tool was clean and sanitary.
Corrective Action(s): Ensure that the slicer is always disassembled and cleaned, then sanitized completely after use.

Observation (CORRECTED DURING INSPECTION): 3rd compartment of the 3 compartment sink is not able to be plugged and filled for manual warewashing.
Corrective Action(s): Discussed reversing the direction of dishware flow and using the 1st compartment to sanitize dishware as a temporary solution.
Repair the plugging mechanism within 24 hours.

Observation: 3 compartment sink cannot be plugged to sanitize dishes in the 3rd compartment.
Corrective Action(s): 1st compartment able to seal. Filled with sanitizer measuring 200 ppm QUATS.
Wash and rinse dishware in the middle compartment and use the 1st compartment to fully submerge dishware and sanitize for 2 minutes.
The sinks must be repaired within 24 hours.
