Observation (CORRECTED DURING INSPECTION): 1) Hot-holding unit is not hot enough. Egg tarts in unit measured 26.7 Celsius to 31.3 Celsius. Two large trays of egg tarts and meat pastries discarded.
2) A large tray of egg tarts was sitting out at room temperature, no time tracking. 18.3 Celsius. Discarded.

Observation (CORRECTED DURING INSPECTION): Improper dishwashing procedures observed. Staff were washing all dishes with soapy water & rinse only; no sanitizer was set up. Ensure that you carry out dishwashing properly, every time. Set up your 3 sink ethod with wash, rinse & sanitizing sinks and carry out all three steps at the same time.
