Egg tarts in unit measured 26.7 Celsius to 31.3 Celsius. Two large trays of egg tarts and meat pastries discarded. 2) A large tray of egg tarts was sitting out at room temperature, no time tracking. 18.3 Celsius. Discarded. Corrective Action(s): Violation Score: 25 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Improper dishwashing procedures observed. Staff were washing all dishes with soapy water & rinse only; no sanitizer was set up. Ensure that you carry out dishwashing properly, every time. Set up your 3 sink ethod with wash, rinse & sanitizing sinks and carry out all three steps at the same time. Corrective Action(s): Violation Score: 15
