302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. No chlorine residual detected in sanitizer spray bottle.
2. Stored utensils and equipment, including ladles, are coated in flour and not in sanitary condition. Bottom of tray holding the equipment is also coated with debris.
3. Fly strip saturated with flies is directly contacting a sanitized cutting board.
Corrective Action(s): 1. Spray bottle was refilled with 200 ppm chlorine residual.
2. Equipment was washed, rinsed, and sanitized at time of inspection.
3. Fly strip removed at time of inspection. Cutting board was rewashed, rinsed, and sanitized. *Note: If you decide to use fly strips, ensure that they are elevated enough so that they do not touch food contact surfaces.*

Ensure that you routinely sanitize all food contact surfaces after each use. It was evident that the spray bottle has not been recently used, as the entire bottle was coated in debris and flour.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwashing station in employee washrooms lacks paper towels in dispenser. Handwashing station in food preparation area contains paper towels in a dispenser, but dispenser no longer has any battery remaining.
Corrective Action(s): Paper towels were refilled at time of inspection in the washroom sink. A roll of paper towels was supplied at the handsink in the food preparation area.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Area behind dough mixer and Morni branded oven contains a significant amount of settled flour.
Corrective Action(s): Thoroughly sweep the area behind the mixer and oven and ensure that this is done on a regular basis (e.g. at the end of each day) to prevent accumulation of flour and debris.

Observation: Battery in paper towel dispenser (located at handsink in food preparation area) has been depleted.

Comments

Routine inspection conducted. Facility in satisfactory sanitary condition. The following observations were made:

1. Temperatures (Max: 4C for coolers, -18C for freezers)
- Front stand-up glass door freezer at -18C
- Stand-up freezer at -18C
- Stand-up cooler at back of kitchen at 4C
- Cooler units equipped with accurate thermometers

2. Hygiene and Sanitizing
- Handwash stations are adequately stocked with hot/cold running water and liquid soap, but not paper towels (see violation code 401 above). Paper towels provided by operator at time of inspection
- Operator has sanitized work tables with the bleach spray bottle prior to resuming work

3. Storage
- All food items are elevated at least 6" off floor, including flour products
- Reminder: Do not leave flour bags open - ensure that they are tightly sealed at the end of the day

4. Administrative
- Operator has FoodSafe 1 (Expiry: Sept 2022)

5. Pests
- No signs of recent pest activity at time of inspection

6. Recommendations
- Please clean the area around the toilet to maintain the washroom in sanitary condition
