Observation (CORRECTED DURING INSPECTION): Used ice cream scoop was held in a bowl in between uses.
Corrective Action(s): Ice cream scoop must be stored in a dipper well or washed and sanitized after each use. Do not leave out at room temperature in between uses.

Observation (CORRECTED DURING INSPECTION): - Paper towel dispenser at hand sink in main kitchen was empty.
- Soap dispenser missing at bar hand sink. No liquid hand soap available for proper handwashing at bar.
Corrective Action(s): - Staff refilled paper towel dispenser at time of inspection
- Replace soap dispenser at bar. Supply hand sink with liquid soap in a pump bottle in the meantime.

Observation: - Floors under cooking equipment require cleaning - significant amount of grease and food debris observed.
- Pooling water in walk-in cooler floor needs to be cleaned up.
- Handles/doors of coolers require cleaning and sanitizing
Corrective Action(s): Clean and sanitize the areas noted above, and do so on a regular basis.

Comments

- All hand washing stations MUST be supplied with liquid soap and paper towels at all times.
- Quats sanitizer solution available in spray bottles, sanitizer buckets, and from main dispensing unit at 200 ppm
- Dishwasher achieved greater than 50 ppm chlorine residual, detected at dish surface after final rinse - good
- Glasswasher at bar achieved greater than 12.5 ppm iodine residual
- Walk-in cooler, pizza prep cooler, all drawer coolers and undercounter coolers were measured to be at or below 4C
- All freezer temperatures were satisfactory. **Note: small freezer in cook line storing fries needs to be defrosted - lots of ice build-up in freezer
- All hot holding units were measured to be above 60C
- Temperature records well maintained and up to date
- Cooked meat was being cooled in ice water bath at time of inspection; temperature measured to be at 13C. Staff stated meat had not been cooling for more than 2 hours; moved to cooler at time of inspection. Reminder for proper cooling: Cool hot foods from 60C to 20C within 2 hours, then from 20C to 4C within 4 hours in a cooler.
- Ice machine maintained in sanitary condition. *Ensure to keep cleaning log for ice machine up to date
- Ventilation canopy maintained in sanitary condition
- Food storage practices satisfactory
- No signs of pest activity noted at time of inspection
