Routine inspection:

Front hand sink provided with liquid soap and paper towels.
200ppm quats available for use in container. Wiping cloths stored in solution when not in use.
Hot holding at or above 60 degrees C in drawer units and along preparation line.
Preparation cooler inserts at or below 4 degrees C. Lower section at 2-3 degrees C.
Sliding glass door cooler at 2 degrees C. Under the counter cooler for extra beverages at 6 degrees C. No cold potentially hazardous foods stored.

Back hand sink provided with liquid soap and paper towels.
3 compartment sink setup for manual ware washing. 200ppm quats available for sanitizing dishes/utensils.
Low temperature dishwasher registers 50ppm chlorine during the final rinse cycle.
2 door freezer at -18 degrees C.
Walk in cooler at or below 4 degrees C.
