Observation (CORRECTED DURING INSPECTION): 1. Scoops for ice cream were stored in dipper well with stagnant water.
2. Noticed staff rinsing tongs for waffles in hand sink.
Corrective Action(s): 1. Ensure scoops are stored in dipper well with running water.
2. Do not use hand sink to rinse equipment. Also, ensure equipment is properly washed and sanitized as needed (in the dish washer).

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Noted lid of ice machine open at time of inspection. Ice machine door opens at waist level and is located beside doorway which is a high traffic area for staff coming and going.
2. Noted prewrapped ice-cream cones stacked in holder on display ice cream freezer - no barrier from patrons.
Corrective Action(s): 1. Keep lid to ice machine closed at all times when ice is not being dispensed to protect food (ice) from contamination.
2. Do not store ice-cream cones intended for public consumption on display ice cream freezer as there is no barrier to protect from contamination. Demo cone is okay for presentation, however, all other cones to be kept behind counter.

Observation: Overall general sanitation satisfactory. Good improvement noted since last inspection, however more attention is needed in hard to reach areas.
Corrective Action(s): Do a thorough cleaning along the perimeter of the walls and under/behind large heavy equipment (ie. coolers, freezers, two compartment sink, shelving units, work tables...etc).

Comments

All hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
Observed good hand washing practices at time of inspection.
Upright two sliding door cooler 4C, Upright two door freezer -16C, ice-cream display unit -10C.
Pearls were being prepared at time of inspection. Staff aware of two hour time tracking permitted for pearls.
No obvious sign of pest activity noted at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Chlorine sanitizer in container with cloths submerged 100ppm.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation areas had covers..etc)
