Comments

Inspection conducted to follow up on outstanding items and violations noted during last routine inspection.
- Inserts in the open well of cooler unit were at 16C to 18C. Operator to discard all cold potentially hazardous foods stored above 4C for more than 2 hours (cut up mushrooms, grated cheese, margarine, cream). Time of inspection approx 1:45pm. Premises closes after lunch at 2pm. No customers noted in premises. This amount of food stored at room temperature is not reasonable at this time. Discussed concerns with operator. Staff have demonstrated that they are not able to use discretion with 2 hour turn over. All foods must be stored in cooler unit at 4C or less.
- Sanitizer was made up and available at 2 compartment sink again. Cloth towels noted on cookline area. No sanitizer available in cookline area.
- Soap available at hand wash station but paper towel was located further away from hand sink on cookline. No paper towel available/installed by dishwashing area either.
- Light covers have been obtained but not installed. Install light covers.
** All noted infractions on the previous inspection report were either reoccuring and/or outstanding. Operator has guaranteed they will be completed/complied with within two weeks. Failure correct outstanding/reoccuring infractions will result in progressive enforcement (ie issuance of orders, tickets...etc).
