Observation (CORRECTED DURING INSPECTION): Potentially hazardous food in prep table cooler was stored above 4C. Internal temperature of pepperoni was 14.9C and internal temperature of sliced ham was 14.1C. Operator had turned off cooler (as directed by refrig. technician) and did not know the exact length of time products had been at this temperature.
Corrective Action(s): Discard potentially hazardous foods. Store potentially hazardous foods in an alternate cooler until the prep table cooler is at 4C.

Observation (CORRECTED DURING INSPECTION): Pizza was being stored at 26C in the warming unit. Pizza must be discarded after 2 hours as it was not stored at 60C or higher
Corrective Action(s): Pizza must be discarded after 2 hours as it was not stored at 60C or higher. Increase temperature of hot holding unit and ensure hot potentially hazardous are stored at 60C or higher.

Observation (CORRECTED DURING INSPECTION): Paper towel was not present at the handwashing station at the time of the inspection. Operator loaded dispenser once advised. Paper towel present in staff washroom but no dispenser present.
Corrective Action(s): Ensure handwashing stations are always equipped with liquid soap and paper towel in dispensers. Supply paper towel dispenser in staff washroom.

Observation (CORRECTED DURING INSPECTION): Roasted peppers were being stored in an open metal can in the cooler. This is an unacceptable practice. Once can is opened, transfer product to plastic container.
Corrective Action(s): Discard contents of can. Signs of pitting and damage to lining of can noted. Correction date: Immediately

Observation: Accumulation of food debris noted on the floor and inside coolers.

Observation: Prep table cooler was initially turned off at the beginning of the inspection as Operator reported it was running warm and Refirg. tech advised him to turn it off for 1 hour. It was turned back on during the insepction however was not at 4C. The temperature was at 11C.
Corrective Action(s): Repair or adjust cooler so that it is able to maintain a temperature of 4C or colder. Remove contents of cooler and use other cooler to store product until this cooler is repaired. Correction date: July 2/16
