Observation (CORRECTED DURING INSPECTION): Pizza sauce in black square container was found at 8 deg C. Operator had taken sauce out within past hour and said that the sauce is meant to be kept at room temperature for the day and then discarded. Operator showed food safety plan that says pizza sauce is to be kept at room temperature as primary storage, food safety plan is unclear as to whether this refers to opened pizza sauce or unopened pizza sauce. Will follow up.
Corrective Action(s): Until confirmation that this sauce can be kept out at room temperature, keep this pizza sauce in the cooler (at <4 deg C) or only bring out enough to use within a 2 hour period and then discard whatever is unused at the end of this period.

3 door prep cooler at 2.5 deg C, inserts at 4-6 deg C (operator was using the toppings and had opened the inserts frequently during inspection)
Walk in cooler: 3.5 deg C
All other coolers: <4 deg C
Freezers at -18 Deg C or less
3 Compartment sink with quat sanitizer available on site
Foods in coolers are covered
