Observation (CORRECTED DURING INSPECTION): 4-door sushi display fridge observed one of the window doors completely open -air temperatures were showing 11 deg C. Operator closed the doors and the temperatures went back down to 3 deg C
Corrective Action(s): Your commercial fridges will not maintain cool temperatures if the doors are left ajar open. Always close the doors immediately after taking out or putting food in.
