Observation: - Small flies observed by the hot holding unit for soup.
- Large flies observed in the back room and by the 3-compartment sink.
- Drain was not in a sanitary condition.
Corrective Action(s): - Thoroughly clean the drains and maitain a regular cleaning schedule.
- Keep the floor and equipment clean and maintain a frequent cleaning schedule.
- Report to the pest control company, take control measures and keep the store free of flies.

Observation (CORRECTED DURING INSPECTION): - Floor was not in a sanitary condition. Carts for sugar and salt storage by the dishwasher have food debris built up.
- A staff deligently mopped the floor and cleaned the carts.

Comments

-General sanitation was OK but has room to improve- see Violation**.
- Hand wash sink was fully equipped with hand soap, paper towel and hot/cold running water.
- All the coolers (Dairy, sandwich, walk in, under the counter) < or = 4C; walk in freezer -18.5C. All food in containers well covered, labelled and dated.
- Hot holding units for meats and soup were all > 60C.
- High temperature dishwasher machine measured 80C on the plate level at the end of rinse cycle.
- Sanitizer at dispenser and in the buckets tested 200ppm- Excellent!
- Ice machine was in a sanitary condition. Scoop was stored properly.
- 3-compartment sink was available for manual cleaning.
- Dry storage area well organized.
- A metal cover on the bottom of the back door was loose, a gap between 2 doors observed. Manager Mandy corrected it during the inspection.
- Staff on duty have valid FOODSAFE certificate.
- Pest company Abell was the service provider. Small flies and large flies observed in the facility- see Violation**.
