Observation: 1) Food and dirt build up noted under shelving, prep areas and equipment in kitchen area.
2) Syrup noted on walls in kitchen area.
3) Food and dirt build up noted under equipment in front service area.
Corrective Action(s): These areas need to be cleaned and maintained in good order at all times to ensure the safe preparation of food and prevent the attraction of pests.

Observation: Ice cream buckets and 4L milk jugs are being re-used for storage of other food items. Mould/dirt build up noted around lip of ice cream buckets stored above 3-compartment sink.
Corrective Action(s): The containers are designed for single use only. Discard containers and replace with food grade containers designed for more than one use.

-front service area handsink provided with liquid soap and paper towel.
-review best handwashing practices with staff.
-showed staff how to mix sanitizer solution (100-200 ppm chlorine) for wiping cloths. Sanitizer solution provided in front end service area and kitchen area at time of inspection. This solution is not to sanitize wiping cloths and the end of the day, but to use for sanitizing surfaces throughout operation. Ensure sanitizer solution is changed at least every 2 hours throughout operation.
