Observation (CORRECTED DURING INSPECTION): The process for reheating chili was not adequate. The cooking unit was not functioning (verified by Tim Horton's equipment specialist at the time of inspection) adequately. The problematic cooking unit has been disconnected at this time. Chili that was being reheated was discarded due to time and temperature abuse.

Observation (CORRECTED DURING INSPECTION): Chili's internal temperature measured at 52C and chicken noodle soup's internal temperature measured at 56.4C in the hot holding unit were discarded by the assitance manager. Time code suggests that it was cooked at 5:00 AM (>4 hours holding). Hot holding unit's temperature was adjusted at this time.

Observation: Moderate to high fly activities were noted at syrup storage and chemical storage area.
Corrective Action(s): Increase the frequency of cleaning non-food contact surfaces (floor, shelves, sticky residue on syrup bottles, etc.). Follow pest control service's recommendation. Depending on the level of pest activity in a follow up inspection, higher frequency visit from pest control service may be requested from Fraser Health.

Observation: Observed dried food debris build up under the dry storage shelves (single use cup storage) and under the two doors cooler/freezer.
Corrective Action(s): Clean and sanitize areas mentioned in the observation section. Correct this by: 1 week.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers at adequate temperature.
Hot holding units measured at 60C or higher. See an exception in the violation section.
Food contact surface sanitizer measured at 200 ppm QUATs (pails and dispenser).
Ice machine in sanitary condition.
In use utensils stored adequately.
8 hours room temperature holding for savoury pastries observed. Time tracked.

Note:
Constant issues noted with fruit fly activities in the back kitchen. Prepare June 9, 2023, pest control report for review. The report will be reviewed during a subsequent visit.
On site manager was not able to locate Food Safety Plan. Please have your Food Safety Plan on site to verify your food handling procedure.
