Observation (CORRECTED DURING INSPECTION): Kitchen designated handsink was blocked off with dirty dishware in the floor area in front of it.

Operator indicates they were using the bar handsink.
Corrective Action(s): All handsinks must be adequately stocked and clear for use at ALL times -to facilitate handwashing

Observation (CORRECTED DURING INSPECTION): One bowl in use for bulk foods.
Scoopers left in the bulk food container
Corrective Action(s): Do not use bowls for bulk foods -only use scoopers with handles so as not to touch the food directly
Do not leave the scoopers in the bulk food container as they can get buried -store the scoopers in a washable container externally

Observation: -Dishwasher has been down for a few days -washer has been serviced and is awaiting parts -operator indicates it should be repaired by today.

NOTE: only disposable containers/utensils/cups are provided to customers at this facility

Reviewed Manual Wash Method with operator at 2-compartment wash sinks: wash-rinse in one sink and sanitize in second sink then air dry -as per wash sign posted there

-Automatic soap dispenser at handsink is not working in back kitchen
Corrective Action(s): - Repair washer -ensure the sanitizing strength is maintained at >50ppm chlorine residual

-Repair automatic soap dispenser -use the dishsoap squeeze bottle temporarily
