Observation: Sani-buckets measured below 200 ppm quats solution when tested (between 0 and 150 ppm). Main dish sink tested similarly low. Drained sink and refilled with quats solution. Again solution tested low (less than 150 ppm). Observed air gaps in line and unusual bubbling in line when feed is turned on. Transport line is very long.
Corrective Action(s): Implement manual feed of quats concentrate to main sink until unit is repaired. Add about 6 to 8 OZ quats to 8 to 10 GAL water in sink? Make sure to drain and refill sanitizer sink every two hours so the sani-buckets can be re-filled with proper quats solution at their required interval. Make sure staff check solution, especially that in the sink to ensure concentration is at 200 + ppm.
This will be checked at follow up inspection date noted on report.

Comments

Sandwich prep cooler may have questionable cool air flow out of left side of unit. Internal base of unit is less than 4 C, but left side of top was measured above 8 C. Lid was left open for product change over so this may have contributed to elevated temperatures. KEEP LID closed as much as possible. Have maintenance staff check unit to ensure fans are working properly, and no obstruction of air movement (vents etc.) in the system is evident.
