Observation (CORRECTED DURING INSPECTION): Observed several frozen items thawing at room temperature
Corrective Action(s): Ensure frozen items are thawed either
1. under COLD RUNNING water, or
2. in a cooler under 4C.

If you know you have product that needs to be cooled, be sure to place it in the fridge over night for thawing. Product placed in a cooler or under cold running water at time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: A very thorough cleaning is required throughout the facility & equipment
Corrective Action(s): 1. Clean around cook line to remove debris
2. All walls need to be degreased and sanitized to remove food and grease
3. Cooler fans need to be cleaned and sanitized
4. Remove all cardboard used to line shelves at storage racks and in coolers
5. Clean inside & outside of all coolers and freezers - remove food debris
6. Ensure all shelves are 6" off the floor to allow for cleaning UNDER the racks. Alot of debris accumulation under racks
7. Wipe down all storage racks with degreaser and sanitizer.
8. Cleaning and organizing required at wooden table for slicer

Cleaning is to be completed by follow up on November 14th, 2016.

Observation: 1. Back wall across from coolers & storage rack has completely deteriorated.
2. Wall behind sink is deteriorating and has alot of food debris caked on

2. Clean wall & install a waterproof, hard and smooth surface that is easily cleanable (i.e. plastic board).

To be completed within 1 month on December 2nd, 2016.

At insert table - do not double stack inserts and/or place inserts on top of food. This does not keep the food on top at 4C or below. Ensure that any extra inserts are placed in the bottom portion of the cooler.

All cold & hot holding equipment temperatures met health requirements
Dishwasher tested at 76.8C at plates surface during rinse cycle
