Observation (CORRECTED DURING INSPECTION): Fly traps were hanging from the ceiling in the noodle prep area and in the back of the kitchen.
Corrective Action(s): Do not hand fly traps in food preparation areas. Corrected during the inspection.

Observation: Hole in wall observed in the old staff washroom (chemical storage room).
Corrective Action(s): Repair within two weeks since this is a potential entry point for pests.

Observation: None of the staff onsite had a copy of their FoodSafe Level 1 certificate or equivalent.

Routine inspection:

No changes made to the menu.
There is no sous vide cooking taking place onsite.
A refrigerated reefer truck is still being rented for transporting food between locations (not onsite at the time of the inspection.)
Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher had 100 ppm chlorine.
Quats sanitizer was at 200 ppm.
No evidence of pests.
General sanitation was satisfactory.
