Observation (CORRECTED DURING INSPECTION): 1. Cut cucumbers in insert and tupperware container with cut avocado stacked on top of above inserts in prep cooler and noted at 7 C
2. Covered inserts of carrots, cabbage and cucumbers noted on tray in left glass cooler at 18 C
Corrective Action(s): Ensure all potentially hazardous foods (PHFs) are stored at or below 4 C. Whole fruits and vegetables can be stored at room temp but cut fruit and veggies are considered PHFs and must be maintained under 4 C. Operator has corrected the prep cooler inserts and will use up the tray of cut veggies with in 2 hours. In the future the operator will not store these PHFs in the cooler while it is above 4 C.

Observation: 1. Old mouse droppings noted in lower corner right behind chemical storage. No other droppings noted during inspection.
2. Splatter noted on walls in back storage rooms
3. Grease splatter noted on wall behind deep frier machine
Corrective Action(s): 1.Clean up any pest droppings immediately once identified and monitor area for current pest activity. If any activity is noticed inform pest control. Droppings appear to be isolated to one are which was difficult to access during regular cleaning.

2. & 3. Ensure all areas of kitchen are cleaned including any splatter on walls, ceiling and floor. Operator indicates they will be cleaning these areas then re-painting the walls and re-installing shelves in the back storage areas. For now clean all surfaces noted above.

Observation: 1. Cardboard used to raise corner of microwave - soaked with grease.
2. Cardboard on side of container deep frier
3. Old multi cleaner bottle used for bleach sanitizer and labelled "sanitizer"
Corrective Action(s): 1. & 2. Ensure all materials used in the premise is smooth, durable, non-absorbent and easy to clean - cardboard is not acceptable. Remove all cardboard from facility.
Correction date: 1 day
3. Do not re-use chemical containers for any chemical other than what was in the original container to prevent unintended chemical mixing. Get new spray bottle and label contents.
Operator got new spray bottle during inspection and will be labelling the bottle "sanitizer".

Observation: Glass standing cooler noted at 18 C during inspection.
Corrective Action(s): Ensure all coolers are capable of maintaining 4 C or less. If not then it must be repaired or replaced. This cooler has had repeat violations and repair issues. This cooler must be Replaced if it is not able to maintain 4 C. If this cooler is noted above 4 C in the future and not functioning properly it will result in a ticket.

DO NOT remove sink until discussing this further with Fraser Health. Contact EHO before any actions are taken with this sink - business card provided.
