Routine Inspection:

Food handling:
- Freezers below 18C
- Hot holding 60C and above
- Food protected from contamination
- Food stored at least 6 inches off the ground
- Ice machine sanitary with scoop stored in separate container
- Accurate thermometers for monitoring freezer and refrigerator temp.
- All coolers able to maintain 4C

Sanitation:
- 200 to 400ppm QUATS sanitizer with time stamps
- 71.2C achieved at plates surface in high temp dishwasher
- No pest activity observed
- Monthly pest control done by Orkin
- Chemicals properly labelled and stored
- Food contact surfaces kept in sanitary manner
- Light bulbs in shatter proof casings
- Back room is kept closed as to prevent pests entering

Hygiene:
- Employees demonstrate good hand washing practices
- Hand sinks stocked with hot / cold water, liquid soap and paper towels
- Employee and customer bathrooms stocked and kept in sanitary manner

Admin:
- Permit posted in a visible location
- FoodSafe trained staff on site
- Temperature logs maintained and are available

Notes:
- Deli cooler was measured at 13C ambient. After 30 minutes it was able to reach 6.0C. This cooler can reach 4C and below in 2 hours.
