Observation (CORRECTED DURING INSPECTION): - Quats solution for in use wiping cloth at barista station was 100ppm. Solution is to be maintained at 200ppm.
- Quats solution for in use wiping cloths not present within kitchen/food preparation area. Cloths noted on counter. Foodhandling staff unsure which product to be used.
Corrective Action(s): - Ensure food contact surface sanitizer at the required concentration is present and in use wiping cloths are kept in solution to control microbial growth and prevent contamination of surfaces when wiping.
- Ensure all staff are trained and know which product is be used and the required concentration.

Corrective actions taken by staff at time of inspection: Quats sanitizer solution at barista station was replaced/refilled from dispenser and verified to be 200ppm. Container of quats sanitizer solution was supplied to kitchen area and in use wiping cloths placed within in it.

Observation: - Open bags of rice and oats noted in dry storage room.
- Bags of icing sugar in crate which was directly on the floor
Corrective Action(s): - Tightly seal bags of dry goods or transfer to pest proof container with tight fitting lid.
- Store all food products on shelving 6 inches off of the floor.

Observation: - Floor of walk-in cooler and floor in both dry storage rooms appear dirty with some spilled food debris.
- Spilled sauce noted on floor in dry storage room (near staff room).
Corrective Action(s): - Thoroughly clean floors in walk-in cooler and dry storage rooms to remove dirt and food debris.

Observation: - Display cooler and line cooler were lacking thermometers inside units.

Note: Coolers noted above have external temperature displays. Separate thermometers are also needed inside the units.

Comments

- General sanitation of food preparation areas satisfactory. See violation above re: sanitation of floors in dry storage rooms and walk-in cooler
- Handsink supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or below)
- Walk-in cooler 2C
- Line cooler 4C
- Display cooler 2C
- Milk cooler 2C
- Chest freezers (4) were maintaining product in a frozen state. Temperature of units were -17C to -22C
- High temperature dishwasher was operational. Final rinse temperature was 75.6C at dish surface
- Quats sanitizer available from dispenser at warewashing sink. Concentration from measured 200ppm. See violation above re: solution for in use wiping cloths
- Pest control contract in place with regular service. No signs of pest infestation noted at time of the inspection.
- 2 staff present reported having valid Foodsafe level 1 certificates - have copy of certificates present to be verified at follow up inspection.

To be addressed:
- Reviewed temperature records and readings were missed this morning and the day prior. Ensure temperature of cold holding units are checked at frequency specified in your food safety procedures. Additionally, ensure that corrective action is taken and recorded if temperature is not within required range.

Observations and required corrective actions reviewed with staff on duty and a copy of the report was provided.
