Cooling units less than 4 C Hot holding above 60 C Handwash stations OK - fully stocked dishwasher above 71 C at plate Quats dispensing at 200 ppm - Recommend luke warm water (not hot, but not cold) **Make sure the spray nozzle is spraying hot water. Sani-bucket at front station below 200 ppm (100 to 150 observed). **Recommend using a time label of some sort and change at regular intervals (i.e. 2 hours).
