Observation (CORRECTED DURING INSPECTION): Food debris observed on meat slicer guard.
Corrective Action(s): Meat slicer must be thoroughly cleaned and sanitized after use. Ensure a flashlight is used to verify all hard to reach areas have been properly cleaned.

Observation: Grease diffusers in exhaust canopy observed with excessive grease build up.
Grease build up observed on underside of shelving below salamander unit

Observation: Hot water faucet at the 2 compartment sink not repaired, This is an outstanding items listed in report on Sept 23, 2022.
Fluorescent light fixture observed not working in food handling area.
Latch on sandwich cooler missing resulting in the door not closing tightly
Current test strips for the glasswasher are difficult for the staff to see the color change.
Winco food warmer is just barely hot holding food at 60c when unit is set to "High"
Corrective Action(s): Repair faucet.
Replace burned out fluorescent bulb
Replace missing latch.
Replace with the original test kit that was used in sept 2023 in which the strips change from yellow to green which is easier to see.
Keep Winco food set to "Max" to ensure food items are being properly hot held.

***Monitoring logs are not on site. Ensure logs are recorded daily for all cold holding , hot holding as well as the dishwasher and glasswasher. This demonstrates that you are doing your due diligence as an operator.
***Dishwasher final rinse sanitizer tested at approx 50-60ppm chlorine. Increase concentration to approx 75ppm.
Wash temperature of the low temperature dishwasher tested at 130F. Soap dispensed into wash cycle.
*Exhaust canopy is over due for servicing according to the decal.
Glasswasher at 16ppm Iodine. Soap dispensed into wash tank. Wash tank temperature at 145F.
