Observation (CORRECTED DURING INSPECTION): - Potentially hazardous foods stored in 2 door undercounter cooler which was >4C. Internal temperature of sausage patties measured 10.9C
Corrective Action(s): - Discard any potentially hazardous foods which are >4C and have been stored in 2 door cooler for 2 hours or greater or if time period is unknown. Sausage patties discarded by staff at time of inspection.
- Transfer any foods which are 4C or colder or have been in this cooler for <2 hours to alternate cooler. Veggie patties and eggs were in the process of thawing and were <4C and therefore were transferred to walk-in cooler.

Observation: - 2 door undercounter cooler was not maintaining a temperature of 4C or colder. Air temperature inside unit measured 8-9C. Loud noise was noted to be coming from unit and ice build up was observed by fan inside unit.
Corrective Action(s): - Repair cooler so that it is in good working order and able to maintain a temperature of 4C or colder.
- Do not store any potentially hazardous in cooler until it is repaired and maintaining required temperature.
Note: Cut vegetables are considered potentially hazardous foods

Observation (CORRECTED DURING INSPECTION): - Container of bleach was stored on shelving next to bag of onions
Corrective Action(s): - Store chemicals away from food products in a designated chemical storage area.
- Corrective action taken at time of inspection: Staff moved bottle of bleach to chemical storage area.

Comments

- General sanitation satisfactory. Minor amount of food debris noted on floor under shelving unit adjacent to walk-in freezer - ensure this area is cleaned as part of your regular cleaning schedule
- Handsink was supplied with liquid soap and paper towel
- All coolers were operating at required temperature (4C or colder) with the exception of cooler noted in violation above.
- Walk-in cooler 2C
- Sandwich line cooler 2C (veggie side) 1-2C (protein side)
- Beverage cooler
- Walk-in freezer -20C
- Hot held foods (meatballs, soup) maintained above 60C
- Facilities available for manual dishwashing including stoppers for sink compartments. Quats sanitizer (200ppm) available from dispenser.
- In use wiping cloths kept in quats sanitizer solution. Concentration measured 200ppm.
- No signs of pest infestation noted at time of the inspection.
- Foodsafe requirement met at time of the inspection.
- Staff/public washroom maintained and supplied with liquid soap and air dryers.

*Temperature monitoring is in place. Records viewed and were up to date; however, 2 door cooler noted in violation above is not included in monitoring. Ensure the temperature of this unit is also being checked.
