Observation: Plastic food containers in stand up freezer is cracked/broken. Broken plastic can result in food contamination.
Corrective Action(s): Replace plastic containers to prevent plastic from contaminating food. Discard any food which may have broken plastic in it. Correction required immediately.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Bags of frozen cooked meat product were being thawed broken cooler at 15.8C ambient temperature.
Corrective Action(s): Do not thaw or store frozen products at temperatures above 4C if not for immediate use. Ensure to keep product or thawing at in a working fridge below 4C. Other methods including running cold water on the frozen product then storing in the fridge at 4C or below until use or cooking.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning and sanitization needed throughout premise for dust, old food debris and grease build up. Some locations are:
1. Fans and walk in cooler fans.
2. Window sills and hard to clean corners below equipment and shelving.
3. The oven and equipment.
Corrective Action(s): Wash and sanitize these area as needed as per the sanitation plan. Correction required this in one week.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Equipment broken or not in good working order:
1. One counter cooler at 15.8C ambient. This unit is not working. Perishable contents moved to working cooler.
2. Hand washing sink hot water tap is not working adequately. The handle is loose. The paper towel dispenser requires the paper to be refilled properly. The paper towels are available on the side but results in the whole towel getting wet when touched.
3. 3 compartment sink drainage is leaking onto a bucket below and require repair.
Corrective Action(s): 1. Ensure cooler can maintain 4C or below before using. Repair this unit. Correction required in two days.
2. Ensure paper towel station and hot water tab is working to enable proper hand washing and drying. Correction required this week.
3. Repair the leak then clean up any spills observed. Correction required in one week.

Hand sinks in use with liquid soap, paper towels and running water.
200 ppm quat sanitizer in spray bottle in use.
Isopropyl alcohol in use for disinfection of frequent touch surfaces.
3 compartment sink in use with sanitizer.
Chemical storage adequate. Chemical containers properly labelled - good.

Permit posted in visible location.

Holding units:

Pizza on hot display is served within 15 to 30 minutes then discarded. Temperature measured at 49C.
Back cooler cheese at 3.6C, freezer chicken wings at -19C and below, walk in cooler cheese at 4.0C,
Prep cooler 3.8C meat sauce, stand up freezer -17.6 meat balls.
Front pop coolers, pop only.
