301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): The kimbab machine hadn't been cleaned after use in the morning. Manager indicated that the machine is used in the morning and then again in the afternoon and then cleaned.
Corrective Action(s): This is not acceptable. The machine must be cleaned and sanitized in between uses if it's going to be used in the morning and then in the afternoon.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) There was no sanitizer in the sanitizer solution in the 3-compartment sink.
2) Countertops were being cleaned using water only.
Corrective Action(s): 1) Follow the proper dishwashing procedures. Wash dishes in the 1st sink, rinse in the 2nd and soak the dishes in the Quat sanitizer solution in the 3rd sink for at least 1 minute before air drying. Get test strips to check if there's enough Quats in the solution and refresh the solution as needed.

2) Use a sanitizer (e.g. bleach or quats) to clean all the equipment (including kimbab machine) and countertops

Observation: -Once opened, place pastes and other foods in a proper container with a lid. Ensure that all food bins are covered.
-Do not store packaging trays directly below the soap dispenser at the sink in the kimbab prep area

-Coolers are below 4 degC. The display cooler by the entrance door has been repaired.
-Freezer are below -18 degC
-Quats is available for sanitizing
-Hand sinks are fully equipped
-Foods that are held at room temperature for 2 hrs or 4 hrs MUST NOT be placed back in the coolers. Any leftover foods MUST be discarded as discussed. They can NOT be placed back in the coolers. The labels on these foods can not have best before dates that exceed the date they were prepared. Change the labels accordingly. As part of your monitoring, get a better thermometer for measuring room temperature as discussed.
