Observation: - Accumulation of flour noted present along edges of floor, particularly along wall by dough sheeter
- Build up of flour present on shelving above dough sheeter
- Cafe seating area (not in use) cluttered with excess items
Corrective Action(s): - Thoroughly clean floor and shelving to remove flour build up
- Organize items in cafe seating area and per code 312, remove any items not required for the food premises operation.

Comments

- Only bakery portion of food premises is currently operation. Breads are baked for distribution only. No retail sale from food premises at this time.
- Cafe (food service) portion not in operation since March 2020. Operator intends to resume operation of cafe within 1-2months *See comments below
- Hot and cold running water present at sinks
- Liquid soap and paper towel present for handwashing at handsink (cafe) and 2 compartment sink in bakery area.
- Staff washroom supplied with liquid soap and paper towel
- Walk-in cooler 1C
- Walk-in freezer -20C
- Food products stored in a manner to prevent contamination - covered/wrapped, stored off of the floor
- Bleach present for sanitizing food contact surfaces and equipment. While in operation, ensure bleach solution of 100-200ppm is available. Test strips present to verify concentration.
- No signs of pest infestation observed at time of the inspection. Ensure back door is kept closed or have screen installed. Rodent traps present for monitoring and control. Ensure all traps are engaged. One trap was noted near back door which needs to be reset.

Prior to resuming operation of cafe (food service), ensure the following:
- Area thoroughly cleaned and food contact surfaces cleaned and sanitized
- Coolers in cafe are operating at required temperatures (4C or colder) and equipped with thermometers
- Foodsafe requirement met. Ensure certificates are valid.
