Observation (CORRECTED DURING INSPECTION): 1) Knife on knife holder appear to have food debris still. 2) Food debris observed on meat slicer, staff was unsure when slicer was last used or if it was cleaned or not. Repeat. 3) Ice machine has mildew on the inside as identified to staff onsite. 4) Wet wiping cloth left in the container (for milk frother) or on the counter (for counters). No sanitizer in the front of the house. Repeat.
Corrective Action(s): 1)2)3) Ensure to clean and sanitize all noted areas properly. Meat slicer must be taken apart and properly cleaned and sanitized after each use or every 4 hours. Recommend placing a food grade bag over the meat slicer to indicate that cleaning has been completed to avoid confusion and to ensure that cleaning has been completed. 4) Wet wiping clothes must be submerged in 200ppm Quats sanitizer between uses as discussed. Use a separate container for milk frother as discussed multiple times before.

Observation: Front of the house flooring, cupboards and shelves appear to have food debris. Specifically, behind coffee machines, corner where multiple fruit fly traps are placed (remove old traps and fallen pastry), between undercounter cooler and prep tables, in drawers. Back of the house cleaning required under dishpit, under dry storage racks, floors of walk-in cooler (spilt fudge) and walk-in freezer (blueberries and food debris). Dust noted on ceiling and wall above dishpit.
Corrective Action(s): Conduct a DEEP CLEAN in all noted areas by follow up inspection. Remove all equipment, thoroughly clean and sanitize the affected areas.
