High temperature dishwasher achieved 72 deg on rinse cycle at dish level. Spoke with owner who had indicated that the dishwasher was serviced and adjusted as the hot water during rinse cycle needed to be adjusted.

Ensure that staff are checking the internal temperature of the rinse cycle to ensure that it is minimum 71 deg C after the rinse cycle at dish level consistently.
