Observation (CORRECTED DURING INSPECTION): Cooked linguine at 10.9C was left on the counter. Staff forgot that he was portioning food.
Corrective Action(s): Staff portioned the pasta and placed the pasta into the cooler.

Observation (CORRECTED DURING INSPECTION): 1) A ladle was submerged in a pan of greek rice. 2) Opened cans of tomato sauce were stored in the walk-in cooler.
Corrective Action(s): 1) Do not keep ladles submerged in food as it contaminates food. 2) Always transfer opened cans of food into food grade containers if it is not finished.

Observation (CORRECTED DURING INSPECTION): Few mice droppings noted behind beer cooler and garbage can in the bar area.
Corrective Action(s): Staff removed droppings at time of inspection.

Observation: Food debris noted on the kitchen floors, behind cooking line, under prep cooler, cabinets and bar floors. Lots of grease noted behind fryer, operator informed that it was from grease dripping on the top.
Corrective Action(s): Please conduct a deep clean on these noted areas. Keep the drip tray clear more often.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No staffs had certified Foodsafe Level 1 during inspection, operator came in towards the end of inspection.
Corrective Action(s): Please schedule staffs so there is a Foodsafe certified staff working at all times. Recommend sending cook to renew his Foodsafe Level 1.
