Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Proper dishwashing procedures are not beig followed. Proper 4 step process is lacking. Use of sinks in the front for dishwashing is not acceptable.)

Note: Do not use dish cloths for air-drying dishware - obtain proper drain mats as discussed.

Significant cleaning has taken place in premises including:
-walk-in cooler/freezer
-primary working surfaces
-storage shelves, bins, some floor areas
-office space
-proofer

General organization improved.

Procedures for sanitizing cloths to include "dirty" bucket and "sanitizer" buckets or similar as discussed.

-Continue to eliminate rodent entry points. Discuss at next inspection.

Detailed sanitation plan needed and to be submitted (email) within three weeks.
