Observation (CORRECTED DURING INSPECTION): Quat sanitizer concentration for wiping cloths observed to be below 200ppm. Quat solution was discarded and replaced at time of inspection
Corrective Action(s): Verify the water is approx 75F before concentrated quat in diapensed into the sanitizing sink. If too hot the quat will burn off faster and testing will not be accurate.
Change Quat solution in wiping cloth containers every hour as opposed to every 2 hours due to the organic load introduced.

Observation: Ice maker not in operation. Manager stated new ice maker will be arriving later this week.
Corrective Action(s): Either purchase ice or make your own ice(Ice cube trays) as a temporary measure to ensure beans are rapildly cooled in the ice water slurry.

Inspection due to complaint with respect to flies and lack of cleaning. No flies observed either in the up front area or the back room area. Overall premises is being maintained
*Make correction to the monitoring log to properly record the"Final rinse temperature" for the dishwasher once the final rinse cycle kicks in. Staff are currently only recording the wash temperature in the dishwasher log.
