301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): A number of soft drink concentrate kegs were found stored in the staff washroom.This can expose the syrup kegs to contamination. Some clean aprons were also being stored on a shelf above the lavatory hand sink.
Corrective Action(s): 1. Remove all of the soft drink concentrate kegs from the staff washroom, clean and sanitize the exterior surfaces and store them in a clean area away from the washrooms.
2. Remove all of the clean aprons as well as clean wiping cloths from the staff washroom. ( immediately).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: A food handler was observed using a cleaning agent (all purpose cleaner) to clean the cutting board, no rinsing and sanitizing being performed.
Corrective Action(s): You must rinse all food contact surfaces such as cutting boards with water after cleaning. Ideally, cutting boards need to be washed with hot soapy water at the sink, throughly rinsed with water and then sanitized using 100 ppm chlorine bleach solution
( use 1 ounce of bleach per gallon of water).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Ice build up noticed around the refrigerant hoses in two areas of the walk-in cooler. Codensation water dripping on the cooler shelves.
Corrective Action(s): Service or repair the walk-in cooler to prevent the ice build-up.(By March 10, 2020).

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Some holes and water stains noticed on the ceiliing in several areas of the service area of the kitchen.
Corrective Action(s): Repair the drywall to cover all the holes. ( Immediately).

Comments

Following corrective actions have been taken:
-Dishwasher final rinse temperature registered 71 C at the plate surface.
-Some parts of the walk-in cooler has been cleaned
-Mop buckets are now stored in the staff washroom.
-Floor has been cleaned in the kitchen including underneath and behind the steam table.

THE PUBLIC HEALTH ACT CORRECTION ORDER IS STILL IN PLACE.

Following items still require your attention. Failure to address these will result in a Violation ticket.
1. Repair or replace the toilet in the staff washroom. ( By March 10, 2020)
2. Sewer back up smells noticed near the owner;s office and flour storage area. You must get a licensed plumber to determine
the source of the smells and repair any drainage issue. Inspect the grease trap and clean if necessary. ( immediately).
3. The door to the staff washroom must remain closed at all times.
4. Clean the walls of the walk-in cooler thoroughly (By March 10, 2020).
5. The sub floor found be wet and some tiles broken near owner' office. Address the source of moisture and replace broken tiles.

* Do not store mops and mop buckets and brooms etc, near food preparation or dishwashing areas.

A follow up inspection will be conducted to check compliance with above required corrective actions.
