Freezers are -18 degrees Celsius or colder.
Sauces were being hot held at 60 degrees Celsius or hotter.
Liquid soap and paper towel are available at handsinks.
Sanitizer in buckets measured 200 PPM Quat residual.
Dishwasher reached 72 degrees Celsius at the plate surface during final rinse. Note: Took running the dishwasher twice to reach required temperature. Ensure that staff are monitoring the temperature on the manifold to ensure that the final rinse reaches 82 deg. C (180 deg. F).
