Observation (CORRECTED DURING INSPECTION): Handsink in pizza prep area not supplied with running hot water. Operator mentioned that a new piece of equipment was installed yesterday and that it may have affected the hot water line. Plumber arrived during time of inspection and was able to repair the water (hot and cold water now available).
Corrective Action(s): Ensure all handsinks are supplied with both hot and cold running water, soap and paper towel at all times to ensure food handlers are able to effectively wash their hands before preparing/handling food.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1. Raw meat observed stored above cut vegetables in walk-in cooler. Raw meat was moved to the bottom shelf during the time of inspection. Repeat Violation.

2. Open can of pineapples observed in sandwich cooler in pizza prep area and open can of tomato sauce observed in the walk-in cooler. Both cans were voluntarily discaded by staff during the time of inspection.

3. Container of sugar and three small containers of salt observed uncovered in the storage room. Operator menioned that the items were pre-measured as per recipe and were covered with plastic wrap during time of inspection.
Corrective Action(s): Ensure all raw meats are stored away from ready to eat foods such as produce to prevent cross-contamination.
Ensure all opened cans of food are stored in food grade containers in coolers or discard opened cans of food immediately after use to prevent metal leaching into food.
Ensure all dry stored foods are in pest-proof containers and are covered to prevent pest entry and prevent possible contamination.

Observation: Fruit flies observed by the sandwich cooler in the pizza preparation area.
Corrective Action(s): Contact pest management to control fruit flies and install sticky traps around the premises. Ensure all foods are covered and protected from contamination and to prevent fruit flies from multiplying.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Dishwasher is not working during inspection. Operator mentioned that they are not allowing dine-in right now. Mostly take-out orders in single-use pizza boxes, plates and/or utensils. For dine-in, customers are also served with disposable single-use items.
Corrective Action(s): Ensure dishwasher is repaired as per approved plans capacity. 3-compartment sink must be used to adequately clean, wash and sanitize all dishware using the drain plugs and 200ppm QUATS solution.

Observation: No lighting available in storage room used to store dry storage ingredients.
Corrective Action(s): Ensure lighting in the storage room is repaired as per approved plans to maintain a clean storage area for foods and to prevent pests from harbouring in room.

Routine Inspection Conducted:

NOTE: facility no longer cooks Indian food - curries are only made for pizza topping. Only pizza is being served to the public. No reusable plates/utensils are being used. All dine-in customers are provided single-use disposable plates/utensils.

Observations:

1. Temperatures:
- Walk-in cooler at 4C
- Stand-up 2-door freezer at -18C
- Sandwich cooler at front pizza prep area at 4C (top) and 4C (bottom)

Reminder: walk-in cooler door was observed slightly open during time of inspection and not sealed shut. Ensure cooler doors are closed properly to prevent temperature increase.

NOTE: two sandwich coolers are no longer in use on premises. Equipment which is no longer in use should be stored off premises to prevent pest harborage and to ensure the premises is kept in a sanitary manner.

2. Sanitation:
- General sanitation satisfactory during time of inspection
- QUATS solution measured at 200ppm
- Handwash station in back prep area and staff washroom adequately supplied with soap, paper towel, hot and cold running water

3. Storage:
- All foods observed stored at least 6 inches off the floor
- Time stamps available on prepared foods in walk-in cooler - good!
- Mop sink area kept in a sanitary manner

4. Administration:
- FOODSAFE Level 1 employee on premises during inspection
- Operating permit available on premises

NOTE: ensure the operating permit is visible in a conspicuous location
