209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Mixer for iced frappe is rinse using sanitizer. Residual sanitizer will be in the mixed drinks. Container of coffee with spout was stored directly on the floor in the walk in cooler. Boxes of frozen items in the walk-in freezer were stored on the floor underneath the last shelf.
Corrective Action(s): Follow Sanitation Plan for rinsing mixer. Use iced water that is changed frequently as soon as ice melts. Store container off the floor in the walk in cooler and all boxes of food in the freezer must be stored on the shelf (min. 6 inches off the floor).

Observation: Flies in the back area even though control measures are in place (coil, blue light, etc.)
Corrective Action(s): Provide mesh covering for the rolling rack where donuts are stored for filling/glazing.

Observation: Areas of floor in the back have debris/grime build up. Underneath dishwasher requires special attention.
Corrective Action(s): Clean floor thoroughly in the back area especially underneath equipment and prep areas.

Comments

Hand wash stations equipped with liquid soap and paper towels.
Quats sanitizer measured 200 ppm.
Walk-in cooler was at or below 4 deg C.
Walk-in freezers were at -18 deg C.
Dishwasher reached 74 deg C at plate surface.
Prep line coolers were at or below 4 deg C. Line freezer was at -15 deg C (maintain at -18 deg C).
Hot holding for soups, chilli, chicken patties, wedges, etc. was at or above 60 deg C.
Temperature log was available and up to date (now switched to paper log).
Pest control monitoring in place. No pests except flies were noted.
Staff wearing clean uniforms and hair restraints.
Premises very busy at time of inspection.
Washrooms required cleaning but this was address at time of visit.
Note: Hand delivered health permit (with address correction).
Please post in plain public view.
Renovations to take place in the fall.
Dining area will be closed but drive thru open.
Changes in the back kitchen area. However, ensure to address the following during closure:
1. Clean back area thoroughly (between and underneath equipment and other areas that are difficult to clean)
2. Repair worn out base board tiles
3. Clean inside and outside of equipment
4. Replace bottom shelves in the walk-in freezers with heavy duty type shelves (shelves are warping)
5. Clean ceiling vents and repair other items that requires attention
