Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution was not available for back of house at start of inspection. QUATS sanitizer solution at front of house was too weak, measured 50ppm.

> A sanitizer solution for food contact surfaces must be availalbe at all times. Bleach solution must be 100-200ppm, QUATS solution must be 200-400ppm.
> Test strips are on site. Please ensure solutions are tested each time they are made.

Observation (CORRECTED DURING INSPECTION): In walk-in cooler:
> Insert of raw meat was stored on top of sauce container, acting as a lid.
> Pot of cooked meat sauce was stored on same shelf among raw meats and seafood.
> 2 trays of cooked food items on bottom shelf were not covered.

Please ensure all food items are protected from contamination: store raw meats separate from and below raw vegetables/fruits and cooked foods, cover all stored items.

Observation (CORRECTED DURING INSPECTION): Backdoor was open at start of inspection. Back of the restaurant leads directly into a parking lot.

> Keep backdoor closed at all times to prevent entrance of pests or install a screen door/window if ventilation during warmer weather is necessary.

Observation: Cleaning is required in several areas.
Corrective Action(s): Attention should be given to:
> Dry storage room: flour, rice and other dry foods on floor
> Walk-in cooler: food debris noted on the floor by tray rack
> Vent hood: panels are heavily soiled
> Dishpit area and food prep: food debris on floor
> Ceiling in kitchen: significantly covered in dirt/grease buildup, especially around the vent openings

Observation: Prep cooler had air temperature of 16.8C. Operator discovered the cooler was not working that morning and called for service. All food stored inside and in insert level was in small portions and for immediate use only, not held for longer than 2 hours.
Corrective Action(s): Cooler must be serviced immediately to maintain 4C or colder. Until then, do not store any food items in the cooler overnight. Facility may continue to store only small amounts for immediate use.

> High temperature dishwasher achieved minimum final rinse temperature of 71C (as per thermolabel).
> Proper cooling observed, discussed process with operator - no concerns.
> Sink plugs available at 2 compartment sink.
> Ice machine maintained in sanitary condition.
> No signs of pests at time of inspection. Pest control services are provided monthly.
