305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): Back door was propped open at the time of inspection. Operator indicated that an equipment was being delivered. Education provided that screendoor must be present to have the back door opened.
Corrective Action(s): Required operator to close the back door. In order to have it open, screendoor must be installed. Door was shut at the time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observed slight food debris and grease build up under the cooking equipment. Although not severe, accumulation is about to begin. Education provided that regular cleaning is required to maintain sanitary condition and to remove pest attractants.
Corrective Action(s): Required operator to clean and sanitize the area. Perform regular cleaning to up keep sanitary conditions.

QUAT sanitizer available in spray bottles; detected 200 ppm of QUAT
Three compartment sink used for manual ware washing, bleach is used to sanitize in the third compartment. Ensure that the sanitizer concentration is between 100 - 200 ppm of residual chlorine
*Discussed concern brought up by a colleague inspector; the item in question is seekh kebab. The main ingredient is chicken; operator showed the menu on site, and explained how they are sold. Operator also indicated that the menu item is included in the food safety plan. Inspector to confirm if it is in the copy at the office.*
