Routine Inspection Conducted

1. Temperatures:
- Walk-in cooler at 3'C
- Walk-in freezer at -19'C
- Display cooler #1 beside ice machine at 3'C
- Display cooler #2 for condiments at 3'C
- All cold-holding units in cooking line (drawers, top and bottom of sandwich coolers, under-counter coolers) measured at 4'C or lower
- Under-counter coolers in bar area at or below 4'C
- Ice cream display freezer at -18'C
- Chest freezer with pre-portioned ice cream containers at -19'C
- Stainless steel freezer in cooking line at -19'C
- Hot-holding units measured at >60'C
- Temperature logs maintained electronically and available during inspection
- Thermometers available in all cold-holding units

2. Sanitation:
- General sanitation of premises satisfactory during inspection
- All hand washing stations are adequately supplied with liquid soap, paper towel, hot and cold running water
- QUATS sanitizer pails (X5) measured at 200 ppm QUATS concentration with test strip
- High-temperature dishwasher reached 76.9'C at plate surface (above minimum sanitizing temperature of 71'C)
- 3-compartment sink available with drain plugs
- Glass washer at bar measured at 25 ppm iodine concentration with test strips
- Iodine test strips available on premises
- Ice machine observed in sanitary condition with scoop placed outside the machine
- Dipper well available for ice cream scoops
- No signs of pests during time of inspection

3. Storage:
- All food observed covered and stored at least 6 inches off the floor
- Dry storage area well kept
- Food containers in coolers are labelled with time stamps (first-in-first-out method in use)
- Raw meats stored away from ready-to-eat foods

4. Personnel:
- Staff observed wearing clean uniforms with hairnets
- Staff observed washing hands often
- Personal belongings are stored away from cooking/prepping area

5. Pests:
- No signs of pests during inspection
- Sticky fly trap in place in dishwashing area
- Pest control company completes monthly inspections

6. Administration:
- FOOD SAFE Level 1 trained staff available on premises
- Operating permit visible at entrance
