Follow up inspection:
-100 to 200 ppm chlorine sanitizer was available inside the labelled sanitizer spray bottles.
-Manual probe thermometer was available on-site to check internal food temperatures during the processing steps.
-Operator is aware to clean and sanitize the probe thermometer prior to and after each use.
-Cooking (74 degrees C or hotter) and hot-holding (60 degrees C or hotter) temperatures were reviewed.
-Thermometer was available inside the upright freezer to monitor that it maintains a temperature at or below -18 degrees C.
