Comments

- Reminder that inserts above line coolers must not be filled all the way to the tops. Only fill 1/2 - 2/3 full to promote better air circulation and to ensure adequate turnover of food items.

- All handwashing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available in buckets and spray bottles at 200 ppm
- All coolers were maintaining temperatures of 4C or colder
- Freezeer measured to be at -18C
- Hot held food items were measured to be above 60C
- Dishwasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle
- Bar glasswasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle
- Temperature and dishwasher records well maintained and up to date
- Accurate thermometers available in coolers and for taking internal temperatures of food items
- Food storage practices satisfactory. Dry storage areas organized, scoops were properly stored
- Ice machine maintained in sanitary condition. In-use utensils were either held in ice or hot held - good.
- Ventilation canopy observed to be clean. *Ensure professional cleanings are up to date.
- Mop closet satisfactory. *Ensure no water is left in mop bucket overnight.
- General sanitation good. Receiving and garbage area satisfactory.
- Pest control in place. No signs of pest activity noted
