Observation: Internal temperature of whole cooked chickens in the hot holdig display unit registered 55-57 C.
Corrective Action(s): Adjust or repair the unit so that chickens are alway held at 60 C or hotter. Check and record internal temperatures at least once a day.(Immediately).

Observation:
Corrective Action(s): 1. Clean the debris build up underneath the deli preparation coolers. Clean the debris between the floor and wall in deli area as well as the gap between deli cooler and floor. (By Dec. 2017).
2. Clean the dust build up around condensers in the meat storage coole in meats department (By Dec. 15, 2017).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Dust and debris accumulation noticed under the grills in the front dairy display cooler as well as above-counter sandwich storage cooler. Temperature on the milk storage side ranged from 6-7 degrees C.
Corrective Action(s): Thoroughly clean both coolers to remove all dirt and debris. Adjust or service the coolers so that these units maintain 4 C or below at all times. (By December 8, 2017).

and hot held foods at least once a day.
