Observation (CORRECTED DURING INSPECTION): 1. One flat of raw eggs stored on the counter at 11-14C. No time tracking. Manager informed that the eggs are usually stored in the cooler but staff took them out for breakfast. 2. No time tracking noted for sliced cheese as the hand on the clock timer (manual change hands on clock for each ingredient on 2/4 hour rule) is missing altogether.
Corrective Action(s): 1. Eggs discarded. Take out smaller amounts of eggs during rush hour and keep the remaining eggs in the cooler at 4C. 2. Use labels to indicate time for now until the regular timer is replaced.

Observation (CORRECTED DURING INSPECTION): 1. Reviewed manual warewashing procedure with onsite manager and was informed that 50ppm Quats required for sanitizing and uncertain how long dishware are submerged for. 2. Small amount of mildew noted in ice machine.
Corrective Action(s): 1. Please review all manual warewashing procedures as per sign posted on wall with all staff. Wash, rinse and sanitize in 200ppm Quats for 1 minute then air dry. 2. Ice machine is cleaned quarterly by Hamilton as per report. Please have onsite staff clean on regular basis as well if mildew is noted.

Observation: A few fruit flies noted around handsink by coffee station and in mop sink area. A bucket of dirty mop water left in the janitorial room.
Corrective Action(s): Ensure to empty mop water and close janitorial door after use. Increase cleaning around areas where acitivity is noted.

***Note: Wiping clothes submerged in chlorine solution is now allowed 3 hour time limit and between 50-100ppm chlorine as per sanitation procedure onsite. Will verify if this is approved.
