Observation (CORRECTED DURING INSPECTION): Quaternary ammonium sanitizer dispenser measured dispensing with less than 100 ppm in concentration. Sanitizing spray bottles measured with less than 50 ppm in concentration. Operator also stated sanitizer in the bottles were switched out every couple of days.
Corrective Action(s): Operator changed the stock bottle and able to dispense 200 ppm quaternary ammonium sanitizer. Refill the 3 compartment sink and spray bottles with 200 ppm quaternary ammonium sanitizer. Clean and sanitize all food contact surfaces. Sanitizer should be switched out every couple of hours as the concentration decreases over time. Ensure test strips are used to verify the concentration of the food sanitizer.
