Observation (CORRECTED DURING INSPECTION): No sanitizer bucket or spray bottle available for the front prepping area.
Corrective Action(s): Correction: Ensure a sanitizer bucket or a spray bottle is available for sanitizing food contact surface in the front prepping area (200 ppm QUAT).

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: (A) Paper towel not in the paper towel dispenser. The edge of paper towel roll on the counter is wet.
(B) Staff do food handling/prepping in the back area beside the warewashing sinks. Staff also need to wash hands between handling dirty and clean equipment during warewashing.
Corrective Action(s): (A) Correction: Place a new roll of paper towel in the dispensers.
Corrected during inspection.
(B) Have paper towel and soap readily available at the warewashing sink area. This issue was noted on the previous report. A follow up inspection will be done to check for corrective action.

-This inspection was done by a training student inspector (uncertified) under the supervision of the district inspector.

Comments:
-Handwash station with hot/cold water & liquid soap.
-QUAT sanitizer dispenser at 3-compartment sink: 200 ppm
-General sanitation is satisfactory
-No obvious sign of pest activity during inspection
-Walk In cooler: 3 deg. C
-Walk In freezer: -14 deg. C
-Sandwich cooler: 4 deg. C
-Undercounter cooler: 4 deg. C
-Hot holding unit: meat ball 61 deg. C, tomato sauce 74 deg. C. soup 60 deg. C

-Reviewed manual warewashing procedures at time of inspection. Manager on duty explained proper steps - no concerns.
