Observation: Marks noted on the inside of ice machine.
Correction: Please clean and sanitize the inside of ice machine by follow up inspection.

Code 302 noted on Routine inspection # CTIN-BAVQGV of Apr-03-2019
Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Wet wiping cloth used to wipe milk wand on espresso machine is left on the machine between uses. Multiple containers of sanitizer were measured at 0-50ppm Quats. One spray bottle meaured 100ppm Quats and the other spray bottle measured 200ppm Quats. One container with clothes submerged measured 100ppm chlorine sanitizer. No test strips onsite. Staffs are unsure the mixing ratio. REPEAT.
Correction: Train all staffs so they understand when chlorine vs. quats are used. Designate a separate wiping cloth station for milk wand. Change sanitizing solution more than just twice a day, recommend using timer or lable. Obtain test strips within expiry date and obtain a measuring cup/spoon to mix the sanitizer. 100ppm chlorine bleach or 200ppm Quats should be applied on food contact surfaces. Staffs remixed all containers and spray bottles with 200ppm quats at time of inspection. Refer to Correction Order.
Comments

All containers are filled with chlorine sanitizer. Direction is to apply two sprays from labelled bottle and fill water up to mid line of insert.
Separate container for milk frother is available. Discussed checking and changing the sanitizer more frequently to ensure there is adequate (100ppm) sanitizer.
Recommended using timer or label on insert.
->Chorine test strip ordered and should arrive next week.
Quats is filled in spray bottles. Direction is to fill the sanitizer concentrate up to 30mL, then fill the spray bottle with water.
Quats test strips available to be tested (200ppm)
Dishwasher unit discussed to be checking rinse temperature as per decal on dishwasher unit.
->Please revise the log so that staffs understand the minimum temperature attained (180F) and space to jot down corrective actions taken if any.
Sandwich cooler is still out of order, no potentially hazardous food stored inside.
Technician has been contacted for repair.
->Retain service report and do not use the sandwich cooler to store potentially hazardous food until further notice. Place a probe thermometer in a glass of water to check temperature as discussed.
E-mail or leave voice mail to the undersigned when the sandwich cooler has been repaired/replaced.
->Ceiling light above dishpit still needs to be replaced.
Ice machine cleaned but please have shift leader check the unit periodically to ensure that the cleaning is completed.
->Floor cleaning under the coffee pickup counter is incomplete.
CORRECTION ORDER is outstanding.
